Panzanella - cooking recipe

Ingredients
    1/4 cup olive oil
    6 cups diced Portuguese rolls
    2 None medium tomatoes, diced
    1 None small yellow pepper, diced
    1 None medium cucumber, halved and sliced
    2 None scallions, sliced
    1/2 cup small green olives
    1/3 cup light Italian dressing
    1/2 cup chopped fresh basil leaves, to serve
Preparation
    Heat oil in a large frying pan over medium heat. Toast bread for 10 mins, or until light golden brown. Transfer to a large bowl and season.
    Meanwhile, combine remaining ingredients. Season. Set aside for 20 mins to marinate then add croutons and basil.
