Ginger Poached Pears With Spiced Ricotta - cooking recipe
Ingredients

1 cup ginger wine
2 tbsp brown sugar
4 None pears, halved, cored (stalks intact)
1/3 cup ricotta
None Pinch nutmeg
None Pinch cinnamon
None Pinch cardamom
Preparation

Combine 2 cups water, wine, sugar and pears in a medium saucepan. Top with heat-resistant plate to keep pears submerged. Bring to a boil. Reduce heat and simmer for 20-25 mins, until pears are tender. Remove pears and keep warm.
Simmer syrup for 10-12 mins, without stirring, until reduced by half. Set aside to cool slightly.
In small bowl, combine ricotta with spices. Serve with pears and the syrup.
