Bacon Cauliflower Soup With Garlic Croutons - cooking recipe

Ingredients
    28 oz frozen cauliflower
    2 tbsp butter
    4 None spring onions, chopped
    4 cups chicken stock
    4 cups milk
    1/2 cup whipping cream
    6 None slices store-bought garlic bread, coarsely chopped
    2 tsp vegetable oil
    5 1/4 oz bacon, diced
    2 tbsp chopped chives
    None None Ground white pepper, to taste
Preparation
    In a medium saucepan, cook cauliflower in boiling water for 5 mins or until tender. Drain. Melt butter in medium saucepan over moderate heat. Saute onion for 3 mins or until soft. Blend or process the cauliflower, onion and 1 cup stock until smooth.
    In a medium saucepan, cook cauliflower puree over moderate heat. Stir in remaining stock and milk. Bring to a boil. Reduce heat; simmer, uncovered, for 3 mins. Stir in cream; cook until heated through. Season with salt and ground white pepper.
    Preheat oven to 350\u00b0F. Place bread on a baking sheet. Bake for 5 mins or until golden brown. Heat oil in a medium skillet over moderate heat. Saute bacon for 3 mins or until crisp. Drain on paper towels.
    Stir half of bacon into soup. Ladle soup into serving bowls. Top with croutons, remaining bacon, and chives.
