Red Lentil Salad - cooking recipe

Ingredients
    7 oz whole red lentils
    3 tbsp white balsamic vinegar
    1 None lemon, zested and juiced
    1 clove garlic, minced
    3 tbsp olive oil
    1 None bell pepper, seeded and diced
    1 cup cherry tomatoes, quartered
    1 cup thinly sliced cucumber
    1/4 cup sliced scallion
    1 (15 oz) can white beans, rinsed and drained
Preparation
    Cook lentils according to package directions until tender. Rinse under cold running water then drain.
    Meanwhile, in large bowl, whisk together balsamic vinegar, 1 tbsp lemon juice, 1 tbsp lemon zest, garlic and olive oil. Season. Add peppers, tomatoes, cucumbers and scallions. Toss to coat. Mix in white beans and lentils. Chill for 30 mins, or until ready to serve.
