Lemon Chicken With Cauliflower - cooking recipe

2 3/4 lb whole chicken
2 None lemons, 1/2 sliced, 2 1/2 juiced
3/4 cup chicken stock
1 bunch spring onions, chopped
1 None cauliflower, cut into florets
1/2 lb cherry tomatoes
2 - 7 oz jars hollandaise sauce
2 tbsp fresh chervil, chopped + extra sprigs, to garnish
Preparation

Preheat oven to 375\u00b0F. Season chicken inside and out then add lemon slices and 3 tbsp juice to cavity and place breast-side down in a roasting pan. Add stock and roast for 45 mins. Turn over, add spring onions, cauliflower and remaining lemon juice to pan and cook for another 30 mins. Add tomatoes and cook for 5 mins.
To serve, heat hollandaise sauce in a small saucepan and add chervil. Transfer chicken and vegetables to a serving platter. Add a little pan juice to hollandaise to thin and serve with chicken. Garnish with chervil.
