Chorizo Dog With Chimichurri - cooking recipe
Ingredients

4 None chorizo, halved lengthwise
4 None hot dog rolls, halved lengthwise
1 None red pepper, seeded and thinly sliced
1 small red onion, thinly sliced
1 None avocado, peeled, seeded and thinly sliced
None None FOR THE CHIMICHURRI
1/2 cup extra-virgin olive oil
1/2 cup parsley leaves
1/4 cup cilantro leaves
1/4 cup red wine vinegar
1 None long red chili pepper, seeded and chopped
2 tsp dried oregano
2 cloves garlic, coarsely chopped
Preparation

Preheat oiled grill pan on medium heat. Grill chorizo 4-5 mins, turning once, until golden and crisp.
For the chimichurri, process all ingredients in blender or food processor until smooth. Season.
Fill rolls with pepper, red onion, chorizo and avocado. Drizzle with chimchurri sauce to serve.
