Ingredients

1 1/4 cups all-purpose flour
1.5 oz Parmesan, grated
1 tsp fennel seeds
1/2 tsp salt
1/2 cup olive oil
1 tsp caraway seeds
None None Brie, at room temperature, to serve
Preparation

Place flour, Parmesan, fennel seeds and salt in a food processor and process until combined. Gradually add oil and process until mixture forms a ball.
Turn dough out on to a lightly floured surface and knead until smooth. Place on a piece of parchment paper and shape into a 1 1/2 inch-thick log. Roll paper to enclose, twisting ends to seal. Chill for 1 hour, or until firm.
Preheat oven to 325\u00b0F. Line a baking sheet with parchment paper. Use a sharp knife to cut log into 1/2 inch-thick slices. Place on prepared baking sheet. Sprinkle with caraway seeds. Bake for 12-15 mins.
Remove from oven. Cool on trays until firm. Serve with Brie.
