Ingredients
-
2 1/4 lbs potatoes, peeled and chopped
1/2 cup butter, cut into cubes
8 None shallots, thinly sliced
1.5 oz raisins, chopped
2 tbsp thyme, chopped
1/2 cup cider
2 tbsp sunflower oil
4 None pork steaks, trimmed
1 None apple, cored and thickly sliced
5.25 oz Camembert, sliced
3/4 cup milk
None Pinch ground nutmeg
Preparation
-
Cook the potatoes in boiling salted water for 15-20 mins, until tender. Drain the potatoes and leave to steam for 1-2 mins. Transfer the potatoes back into the pan, season and add 1 tbsp butter, the milk and nutmeg. Mash coarsely.
Meanwhile, prepare the gravy: heat 2 tbsp butter in a saucepan, add the shallots, raisins and thyme and saute for 2-3 mins. Deglaze the pan with cider, then simmer for 4 mins. Stir in the remaining butter. Set aside and keep warm.
Heat the oil in a large frying pan. Season the pork, then cook over high heat for 3-4 mins, turning halfway through. Place the pork on a baking sheet and top each steak with sliced apple and cheese. Bake for 5-8 mins until the pork is cooked through. Divide the pork and potatoes between 4 plates, then spoon over the gravy. Serve.
