Whole Wheat Bagels - cooking recipe

Ingredients
    3 2/3 cups wheat flour
    1 1/4 cups spelt flour
    4 cups rolled oats
    2 tsp salt
    3 tbsp active dry yeaast
    2 tsp sugar
    2 medium egg yolks
    1 tsp cream
    None None poppy seeds, sesame seeds, linseeds or oats
Preparation
    In a large bowl, mix together the wheat flour, spelt flour, oatmeal and salt. Mix together the yeast, sugar and about 2 1/2 cups lukewarm water and stir until the yeast dissolves then pour into the flour mixture and knead into a dough. Cover and place in a warm place for about 30 minutes to proof.
    Turn the dough out onto a floured surface, knead again and divide into 12-13 pieces. Roll each piece into a ball and, using the end of a wooden spoon, make a hole in the middle to form rings. Place on a lined baking tray, cover and leave for another 15 minutes.
    Bring a large pot of water to the boil and drop the bagels in, 2 or 3 at a time, and boil for 15-20 seconds. Drain well and put back onto the baking tray.
    Preheat oven to 400\u00b0F. Mix the egg yolk and cream, brush the bagels and sprinkle with your choice of seeds or oats. bake in the oven for 20-25 minutes then allow to cool before slicing and filling with what ever you choose.
