Spiced Lamb With Couscous - cooking recipe

Ingredients
    2 tbsp harissa
    4 (7 oz) lamb tenderloins
    2 tbsp olive oil
    7 oz instant couscous
    3.5 oz cherry tomatoes, halved
    3 tbsp fresh parsley or cilantro leaves, roughly chopped
    1.5 oz toasted pine nuts
    40 g toasted pine nuts
Preparation
    Rub harissa over lamb. In a frying pan, heat 1 tbsp oil over high heat. Sear lamb for 4 mins per side, or until cooked to your liking. Remove from heat, cover with foil and let rest for 10 mins.
    Meanwhile, in a bowl, combine couscous with 1 cup boiling water. Cover and set aside for 5 mins. Fluff up with a fork. Add remaining oil, cherry tomatoes, herbs and pine nuts.
    Pile couscous onto serving plates and top with sliced lamb. Serve.
