Sugar-Roasted Vegetables - cooking recipe

Ingredients
    2 None red bell peppers, thickly sliced
    2 None carrots, thickly sliced on a bias
    2 None red onions, cut into thick wedges
    8 None baby beets, trimmed, quartered
    3 None zucchini, thickly sliced on a bias
    5 cloves garlic, peeled
    1/4 cup vegetable or olive oil
    1/4 cup brown sugar
    1 tbsp fresh lemon thyme leaves + extra, to serve
Preparation
    Preheat oven to 400\u00b0F. Combine all ingredients. Season then transfer to a large roasting pan. Roast for 40 mins, or until vegetables are tender and caramelized. Serve sprinkled with reserved lemon thyme.
