Steamed Pork And Fish Dumplings - cooking recipe

Ingredients
    5 oz ground pork
    5 oz boneless fish, cubed
    2 oz water chestnuts, chopped
    2 tbsp chopped cilantro
    2 None spring onions, chopped
    2 inch piece ginger, grated
    1 tbsp light soy sauce
    1 tbsp fish sauce
    30 None dumpling wrappers
    None None soy sauce, for dipping
    None None rice vinegar, for dipping
Preparation
    Line a large bamboo steamer with parchment paper. For the filling, place all ingredients, except wrappers, in a food processor and process until smooth. Place 1 tsp filling in center of each wrapper. Brush wrapper edges with water. Press edges together, pleating to seal.
    Arrange dumplings in a single layer in steamer, sealed side up. Place on a wok of simmering water. Cover tightly and steam 5-8 mins, until cooked through, topping up water as needed. Repeat with remaining dumplings, if necessary. Serve with soy sauce and vinegar.
