Burgers With Spicy Coconut And Peanut Sauce - cooking recipe

Ingredients
    1 tsp peanut oil
    1 stalk (4 inches) fresh lemon grass, finely chopped
    1 None red onion, finely chopped
    1/2 tsp Chinese five-spice powder
    1/2 tsp red pepper flakes
    1 tbsp fish sauce
    2 tsp finely grated lime peel
    1/2 cup canned creamed coconut
    2 tbsp crunchy peanut butter
    1 lb ground chicken
    1/2 cup stale breadcrumbs
    1/4 cup finely chopped fresh cilantro
    1 None egg
    1 None carrot
    1 small cucumber
    4 None hamburger buns, toasted
Preparation
    Heat the oil in a small skillet on medium heat. Cook the lemon grass and onion, stirring, until the onion softens. Add the five-spice, red pepper flakes, fish sauce, lime peel and coconut; bring to a boil. Boil the sauce mixture, uncovered, until reduced by half. Cool for 5 mins.
    Combine half of the sauce with the peanut butter in a small bowl. Set aside. Combine the remaining sauce with the chicken, breadcrumbs, cilantro and egg in a large bowl. Form the chicken mixture into 4 patties.
    Using a vegetable peeler, slice the carrot and cucumber into thin strips.
    Cook the patties in a heated, lightly oiled large skillet for about 15 mins or until cooked through.
    Spread the peanut butter mixture on the bun tops. Sandwich the patties, carrot and cucumber between the bun halves. Serve immediately.
