Chicken, Spinach And Watercress Salad - cooking recipe

Ingredients
    5 tbsp olive oil
    3 tbsp pumpkin seeds
    1 lb chicken breasts, cut into strips
    1 None small red onion, thinly sliced
    1 None lemon, zested and juiced
    2 tsp fresh thyme, chopped + extra sprigs, to garnish
    2 tsp grainy mustard
    7 oz baby spinach
    2 oz watercress, tough stalks removed
Preparation
    Heat 1 tbsp oil in a frying pan and toast pumpkin seeds. Set aside. Add chicken and saute, stirring, for 6-8 mins until cooked through.
    Meanwhile, mix onion, lemon zest, 1 tbsp lemon juice, thyme, mustard, and remaining oil and season. Toss with spinach, watercress and pumpkin seeds. Distribute between serving plates, add chicken and serve.
