Italian Roast Pork - cooking recipe

3 cloves garlic, sliced thinly
1 tbsp fresh rosemary leaves
1 tsp fennel seeds
1 tsp vegetable oil
5 1/2 lb bone-in pork loin, rind scored
Preparation

Using a mortar and pestle, lightly crush garlic, rosemary and fennel seeds. Add oil then rub over pork. Season. Transfer to a baking dish, cover with plastic wrap and chill overnight.
Preheat oven to 425\u00b0F. Pat pork dry with paper towels. Place on a rack in a roasting pan and roast for 20 mins, until starting to brown.
Reduce heat to 375\u00b0F. Cook for another 1 hour 30 mins, until crackling is golden and crisp and pork is cooked through.
Let rest for 15 mins. Remove crackling and cut into serving pieces. Carve pork and arrange on a serving platter with crackling.
