Chicken, Fennel And Orange Salad - cooking recipe

Ingredients
    2 tbsp butter
    3 None boneless skinless chicken breasts, thinly sliced
    1 None fennel bulb, thinly sliced
    1/2 cup pitted black olives, quartered
    3 None green onions, trimmed and thinly sliced
    2 None oranges, segmented
    3 oz arugula leaves
    None None FOR THE DRESSING
    1/2 cup orange juice
    2 tbsp olive oil
    1/2 tsp sugar
Preparation
    Melt butter in a large skillet on medium-high heat. Cook chicken until well browned and tender.
    For the dressing, whisk all ingredients in a medium bowl. Season.
    Place chicken in large bowl with fennel, olives, onion, orange, arugula and dressing. Toss gently to combine.
