Spiced Chicken With Roasted Cauliflower And Brown Rice Pilaf - cooking recipe
Ingredients

1/2 head cauliflower, cut into florets
1 None lemon, half cut into wedges, half zested and juiced
4 cloves garlic, crushed
2 tbsp olive oil
2 tsp smoked paprika
4 None chicken thigh cutlets, skin on
1/2 tsp chili powder
3/4 cup Greek yogurt
1 cup cooked brown long-grain rice, cooled
2 cups baby spinach leaves
Preparation

Preheat oven to 400\u00b0F.
In a baking dish, toss cauliflower, lemon wedges, garlic and oil together. Sprinkle with half paprika and season with salt and pepper. Cover with foil and roast for 20 minutes.
Remove foil. Place chicken on top of cauliflower and baste. Sprinkle with remaining paprika and chili powder roast 20-25 minutes, until chicken is cooked through.
Meanwhile, in a bowl, combine lemon zest and juice with yogurt season to taste.
In another bowl, combine rice with spinach and cauliflower (discard lemon wedges). Serve chicken with rice and lemon yogurt.
