Eggplant And Mozzarella Slices - cooking recipe

Ingredients
    2 None eggplants, peeled, cut into 8 - 3/4 inch thick slices
    9 oz mozzarella cheese, cut into 8 slices
    8 None fresh basil leaves
    1/4 cup olive oil
Preparation
    \"Butterfly\" each eggplant slice horizontally. Gently open up. Place 1 slice of mozzarella and 1 basil leaf in the center of each eggplant slice. Fold eggplants back over mozzarella and basil. Trim cheese, if necessary.
    Heat olive oil in a large frying pan over medium heat. Cook eggplant parcels until browned on both sides and mozzarella begins to melt.
