Dark Chocolate And Ginger Truffles - cooking recipe

Ingredients
    1/3 cup heavy cream
    7 oz dark chocolate, chopped
    4 oz candied ginger, finely chopped
    1/4 cup cocoa powder
Preparation
    Stir heavy cream and chocolate in a small saucepan over low heat until smooth. Stir in ginger. Transfer to a small bowl, cover and chill for 3 hours or overnight.
    Remove 1/4 of the chocolate mixture from refrigerator and roll rounded teaspoons into balls. Place on a tray and chill until firm. Repeat with remaining mixture.
    Working quickly, roll truffles in sifted cocoa powder. Return to tray and chill truffles until firm.
