Endive And Orange Salad - cooking recipe
Ingredients

1 2/3 cups low-fat yogurt
1-2 tsp curry powder, to taste
4 None oranges, peeled, pith and segments between membranes removed, any juice collected
1 lb Belgian endive, cut into strips
1 lb red peppers, deseeded and cut into strips
4 None kiwis, peeled and sliced
7 oz smoked turkey breast, sliced and cut into strips
1/4 cup fresh flat-leaf parsley, roughly chopped
Preparation

Mix yogurt, curry powder and 4 tbsp orange juice. Season then toss with enfdive, peppers, kiwi, orange segments and turkey. Sprinkle with parsley.
