Crispy Chicken And Vegetable Casserole - cooking recipe

Ingredients
    1 1/2 lb chicken thighs, halved
    1 lb frozen mixed vegetables
    3.5 oz baby spinach
    3.5 oz feta cheese, diced
    1/3 cup fresh breadcrumbs
    2 1/2 tbsp butter, melted
Preparation
    Preheat broiler. Arrange chicken thighs in a lightly oiled, shallow baking dish. Season. Broil for 8 mins, turning once, until cooked.
    Meanwhile, place frozen vegetables in a bowl and cover with boiling water. Set aside for 3 mins. Drain.
    Arrange vegetables and spinach over chicken. Top with feta. Season. Combine breadcrumbs and butter then sprinkle over top. Broil for 5 mins, around 8 inches from heat, until topping is browned and crisp. Season.
