Pesto Spaghetti With Bacon And Spinach - cooking recipe

Ingredients
    13 oz spaghetti
    4 strips bacon, thinly sliced
    1 None medium red onion, halved, thinly sliced
    1 None medium red pepper, thinly sliced
    3 1/3 cups baby spinach
    2/3 cup pesto
    1.5 oz Parmesan, shaved, to serve
Preparation
    Cook pasta according to package instructions. Drain pasta, reserving 1/4 cup of cooking liquid
    Meanwhile, heat a large, deep frying pan over moderate heat. Add bacon, onion and pepper and cook, stirring, 6-7 mins or until pepper softens. Add spinach; cook 1 min.
    Add pasta, reserved cooking liquid and pesto to pan; toss until heated. Spoon into bowls. Serve topped with shaved Parmesan.
