Healthy Chicken Burger - cooking recipe

Ingredients
    2 tbsp oil
    2 None chicken breast fillets (each about 5oz), halved lengthways
    3 oz mayonnaise
    4 tbsp curry powder
    4 None whole grain rolls, halved
    2 oz endive leaves
    1/2 lb light mozzarella cheese, sliced
    2 oz sun-dried tomatoes in oil, drained and chopped
    1 None onion, peeled and cut into rings
Preparation
    Heat the oil in a large frying pan and fry the chicken, turning, for 6 minutes. Remove from the pan and season with salt and black pepper.
    Mix the mayonnaise and curry powder then spread over the lower half of the rolls. Top with the endive, chicken, mozzarella, tomatoes and onion. Sprinkle with pepper and top with the other half of the roll.
