Moroccan Lamb With Couscous - cooking recipe
Ingredients

1 (1 lb) lamb tenderloin
2 tsp ground cumin
2 tsp ground coriander
1/2 tsp ground cinnamon
1/2 cup plain yogurt
3.5 oz couscous
2 tbsp dried currants
2 tsp finely grated lemon zest
2 tsp lemon juice
1/4 cup fresh cilantro leaves
Preparation

Combine lamb, spices and 1/4 cup yogurt in a medium bowl. Cover and refrigerate for 3 hours or overnight.
Preheat grill and oil grates. Grill lamb until cooked to your liking. Cover and let rest for 5 mins. Slice thinly.
Meanwhile, combine couscous and 1/2 cup boiling water in a large heatproof bowl. Cover and let stand for 5 mins, or until liquid is absorbed, fluffing with a fork occasionally. Stir in currants, lemon zest, lemon juice, fresh cilantro and lamb. Toss with a fork to combine.
Serve lamb and couscous with remaining yogurt.
