Fish And Chorizo Soup - cooking recipe
Ingredients

3 tbsp olive oil
1 None onion, peeled and diced
3 None chorizo sausages, sliced thickly
1 clove garlic, peeled and finely chopped
2 None medium red peppers, seeds removed, chopped
1 tsp Spanish paprika
2 None bay leaves
6 None fresh thyme sprigs
1 tbsp fresh oregano leaves
1 1/2 lbs unpeeled baby potatoes, halved
14 oz can tomatoes
6 cups chicken stock
2 lbs thick, boneless cod fillets, cut into large chunks
Preparation

Heat the oil in a saucepan. Add the onion and cook 5 mins. Add the chorizo, garlic and peppers and cook 2-3 mins. Add the paprika, herbs and potatoes, and stir to coat in the oil. Add the tomatoes and stock. Cover and simmer 15 mins. Add the fish and cook 4 mins, until just opaque. Season and ladle into bowls to serve.
