Lemon And Garlic Lamb Rack - cooking recipe

Ingredients
    2 tbsp olive oil
    3 (2 3/4 lb) lamb racks
    1 1/4 lb baby new potatoes
    2 None lemons, quartered
    1 bulb garlic, unpeeled cloves separated
    4 None zucchini, halved lengthwise
    1 tbsp fresh lemon thyme leaves
Preparation
    Preheat oven to 400\u00b0F.
    Heat 1 tbsp oil in a large frying pan. Cook lamb, turning, for 5 mins, or until browned all over. Transfer to a roasting pan and season. Add potatoes, lemons and garlic to pan. Drizzle with remaining oil. Roast for 25 mins for medium-rare, or until cooked to your liking. Remove lamb from pan and let rest, covered, for 15 mins.
    Meanwhile, add zucchini to potatoes in pan and toss to combine. Increase oven to 500\u00b0F and roast for 20 mins, or until tender and golden. Add thyme and toss to combine.
    Serve lamb with roasted vegetables and lemon quarters.
