Meatballs With Couscous Salad - cooking recipe
Ingredients

1 slice white bread, toasted, broken into chunks, soaked in cold water for 5 mins, squeezed dry
8.75 oz lean ground beef
1/2 None white onion, finely chopped
2 tbsp fresh cilantro leaves, chopped
1 None egg, lightly beaten
1 tbsp olive oil
15 oz couscous
10.5 oz cherry tomatoes, quartered
1 None cucumber, quartered lengthwise, sliced
1 None small red onion, halved, thinly sliced
2 tbsp lemon juice
1 tsp cumin seeds
None None yogurt, to serve
Preparation

Combine breadcrumbs, ground beef, onion, 1 tbsp cilantro and egg. Season. Shape into 16 small meatballs.
Lightly coat a large frying pan with oil. Cook meatballs over high heat for 5-7 mins, until browned and cooked through. Set aside.
Bring olive oil and 2 cups water to a boil. Add couscous and cook over low heat until water is absorbed. Fluff with a fork to separate grains. Remove from heat. Toss with remaining ingredients, except yogurt. Serve with meatballs and yogurt.
