Pork And Pineapple Baguettes With Kaffir Lime Mayonnaise - cooking recipe

Ingredients
    None None FOR THE PORK PATTIES
    1 2/3 lbs ground pork
    1 None white onion, grated
    1 piece (3/4 inch) fresh ginger, finely grated
    2 tbsp chopped cilantro
    1 tbsp honey
    1 tsp Chinese five spice
    1/2 tsp ground white pepper
    2 medium baguettes, cut into 8 pieces, split in half horizontally
    2 cups salad greens
    None None FOR THE PINEAPPLE SALSA
    1/2 small pineapple, finely chopped
    1 small red pepper, finely chopped
    2 None green onions, thinly sliced
    1 small cucumber, halved lengthwise, seeded and finely chopped
    2 tbsp chopped mint
    2 tbsp kaffir lime juice
    None None FOR THE KAFFIR LIME MAYONNAISE
    1 cup mayonnaise
    1 tbsp grated kaffir lime peel, plus 1 tbsp kaffir lime juice
Preparation
    For the pork patties, combine pork, onion, ginger, cilantro, honey, five spice and white pepper in a large bowl. Season. Shape mixture into 16 patties. Refrigerate for 20 mins.
    Meanwhile, for the pineapple salsa, combine all ingredients in a small airtight container. Cover and refrigerate until needed.
    For the kaffir lime mayonnaise, combine all ingredients in a small airtight container. Cover and refrigerate until needed.
    Heat a grill pan or large skillet on medium heat. Spray patties with no stick cooking spray. Cook for 4-5 mins each side, until cooked through.
    To assemble, spread a little mayonnaise over baguette bottoms. Top each with salad greens, 2 patties, salsa and a little more mayonnaise. Season and serve.
