Ginger Salmon Cakes - cooking recipe

3 tbsp olive oil
1 None onion, chopped
1/2 None lemon, zested
1 lb salmon, skin-removed and diced
1 inch fresh ginger, peeled and chopped
None None canola oil, for deep-frying
2 1/4 lb baking potatoes, peeled and cut into French fries
2/3 lb frozen peas
None None fresh dill, to garnish
Preparation

Heat 1 tsp olive oil in a pan and sweat onion until softened. Remove from heat. Combine with lemon zest, fish, ginger and 2 tsp olive oil. Season with salt then form into 8 patties. Heat remaining olive oil in a pan and fry patties for 4-5 mins over medium heat, turning once.
Heat oil for deep-frying to 300\u00b0F. Cook French fries, in batches, for 4 mins. Remove with a slotted spoon and drain on paper towels. Meanwhile, simmer peas in salted water for about 3 mins. Drain well. Serve fish cakes with French fries and peas. Garnish with dill.
