Layered Eggplant And Mozzarella Bake - cooking recipe

4 tbsp olive oil
2 medium eggplants, sliced lengthwise
1 1/2 cups tomato sauce
12 oz mozzarella cheese, thinly sliced
Preparation

Preheat the oven to 400\u00b0F. Heat 2 tbsp of the olive oil in a large skillet on medium heat. Cook the eggplant, in batches for 3-4 mins, turning, until soft. Add remaining oil as needed. Drain on paper towels.
Spread a few spoonfuls of tomato sauce on bottom of a baking dish. Layer with 1/2 the eggplant, 1/3 of the mozzarella and 1/2 of the remaining sauce. Repeat layers. Finish with a layer of mozzarella.
Bake for 35 mins until golden.
