Chocolate Orange Star Cake - cooking recipe

1 3/4 cups self-rising flour
1 cup flour
3/4 cup unsweetened cocoa powder
1 cup (2 sticks) butter, at room temperature, chopped
1 3/4 cups firmly packed brown sugar
1 cup heavy cream
1/2 cup freshly squeezed orange juice
4 None eggs, at room temperature, lightly beaten

4 oz white chocolate, melted
2 tbsp silver dragees
3 oz semi-sweet chocolate, melted
None None FOR THE CHOCOLATE ORANGE GANACHE
7 oz semi-sweet chocolate, chopped
2 tsp finely grated orange peel
3/4 cup heavy cream
Preparation

Preheat the oven to 350\u00b0F. Grease and line a 11 x 8-inch baking pan with parchment paper, extending paper over long sides for handles.
Sift flours and cocoa powder into a large bowl. Add butter, sugar, cream, orange juice and eggs. Beat with an electric mixer on low speed until ingredients are just combined. Increase speed to medium; beat for 3 mins or until mixture is thick and pale. Spread into prepared pan, smoothing surface.
Bake for 45-50 mins or until toothpick inserted into center comes out clean. Cool in pan 15 mins. Remove from pan; cool completely on wire rack.
Meanwhile, for the chocolate stars. Spread melted white chocolate to 1/8 inch-thickness on parchment paper. Sprinkle with half the silver dragees. Let stand until chocolate is set. Repeat with dark chocolate. Using 1 and 2-inch star cutters, cut as many stars as possible from chocolate. Let stand for 15 mins or until firm.
For the ganache, combine chocolate, orange peel and cream in a small saucepan on low heat. Cook and stir for 2-3 mins or until melted and combined. Transfer to a medium bowl. Cool slightly. Refrigerate, stirring occasionally, for 30 mins or until thick. Beat ganache with electric mixer for 30 seconds or until light and creamy. Spread over top of cake. Decorate with white and dark chocolate stars.
