Baked Huevos Rancheros - cooking recipe

Ingredients
    1 small red onion, finely chopped
    2 medium tomatoes, coarsely chopped
    1 small red pepper, chopped
    1/4 tsp smoked paprika
    1 can (15 oz) baked beans in tomato sauce
    8 None flour tortillas
    4 None eggs
    1 medium avocado, chopped
    1 can (11 oz) corn kernels, rinsed
    2 tbsp chopped cilantro leaves
    1 tbsp lime or lemon juice
    1/2 cup reduced fat sour cream
    None None Lime or lemon wedges, to serve
Preparation
    Preheat the oven to 350\u00b0F. Line 2 baking pans with parchment paper.
    Heat a large skillet on medium heat. Add onion and spray with no stick cooking spray. Cook and stir for 2 mins or until soft. Add tomato, pepper and paprika; cook and stir for 3 mins or until vegetables soften. Stir in beans. Season with salt and pepper.
    Place half the tortillas on prepared pans. Spray with cooking spray; top with remaining tortillas (you should have 4 stacks). Spread bean mixture on each stack. Make an indentation in the center. Crack an egg into each indentation.
    Bake for 10-12 mins or until eggs are cooked to desired doneness.
    For the avocado salsa, combine avocado, corn, cilantro and lime or lemon juice in a medium bowl. Season with salt and pepper. Serve tortillas with avocado salsa, sour cream and lime wedges.
