Pork Tenderloin With Apricots And Gorgonzola - cooking recipe

1 tbsp oil
1 2/3 lb pork tenderloin, cut into 1 inch thick medallions
1/2 cup vegetable stock
3.5 oz Gorgonzola cheese, crumbled
6 None apricots, pitted and cut into wedges
3.5 oz arugula
None None sliced baguette, to serve
Preparation

Preheat oven to 325\u00b0F. Heat oil in a frying pan and sear pork over high heat for 2 mins. Transfer to an ovenproof serving dish and add stock. Top each medallion with cheese and apricot wedges. Season and bake for 15-20 mins, until pork is cooked through. Sprinkle with arugula and serve with sliced baguette.
