Goat Cheese Stuffed Sweet Potatoes - cooking recipe

4 medium sweet potatoes
2 None eggs, lightly beaten
1/2 cup coarsely chopped fresh chives
5 oz goat cheese, crumbled

Preheat the oven to 400\u00b0F. Line a baking pan with foil.
Scrub sweet potatoes; pierce all over with a fork. Wrap in plastic wrap; cook in a microwave oven on HIGH (100%) for about 8 mins or until tender. Cool 5 mins, then unwrap.
Cut a 3/4 inch-deep incision, lengthwise from one end of the sweet potato to the other. Using a tea towel, gently squeeze the bottom of the sweet potatoes to open the top. Scoop two thirds of flesh into a medium bowl.
Add eggs and half the chives to sweet potato flesh; stir to combine. Season. Divide mixture among sweet potatoes; top with crumbled cheese. Place on prepared pan.
Bake about 5 mins or until golden brown. Sprinkle with remaining chives.
