Poached Pears With Hot Chocolate Sauce - cooking recipe

Ingredients
    1 2/3 cups ginger beer
    1/2 cup granulated sugar
    1 None cinnamon stick
    4 None pears, cored, peeled, stem intact
    7 oz dark chocolate, broken into pieces
    1 1/4 cups heavy cream
    None None vanilla ice cream, to serve
Preparation
    Combine ginger beer, 1/2 cup water, sugar and cinnamon over medium heat, stirring to dissolve sugar. Bring to a boil. Add pears then reduce heat and simmer, uncovered, for 15-20 mins, or until tender. Transfer pears to serving plates.
    Meanwhile, melt chocolate and heavy cream together over a double boiler for 5 mins, until melted and smooth. Remove from heat.
    Drizzle hot chocolate sauce over pears. Serve with ice cream.
