Almond Paste - cooking recipe

Ingredients
    2 1/2 cups powdered sugar
    1 1/4 cups ground almonds
    2 tbsp brandy
    1 None egg yolk
    1 tsp strained lemon juice
Preparation
    Sift the powdered sugar and almonds into a large bowl; discard any lumps. Stir in the remaining combined ingredients.
    When the mixture becomes too stiff to stir, use your fingers to press the ingredients together. Turn the paste onto a surface dusted with additional sifted powdered sugar; knead gently until paste becomes smooth and pliable.
    Wrap the paste in plastic wrap to keep airtight until required.
