Vegetable Stew With Chicken Meatballs - cooking recipe

350 g chicken sausages
2 tbsp olive oil
1 None red onion, peeled and cut into wedges
1 None garlic clove, finely chopped
1 litre vegetable stock
400 g potatoes, peeled and cut into wedges
1 None bay leaf
250 g courgette, roughly chopped
1 None orange pepper, deseeded and cut into strips
350 g broccoli florets
30 g chives, chopped
Preparation

Remove casing from the sausage and form into 16-20 small meatballs. Heat 1 tbsp of the olive oil in a frying pan, add the meatballs and cook for 5-8 mins until golden all over. Set aside.
Heat the remaining oil in a large saucepan, add the onion and garlic. Cook, stirring occasionally, for 3-5 mins until the onions have softened. Pour in the stock, and add the potatoes and bay leaves. Simmer for 10 mins.
Add the meatballs, zucchini, pepper, and broccoli and simmer for another 5 mins. Stir through the chopped chives. Season to taste with salt and freshly ground black pepper.
