Ingredients

1 sheet frozen puff pastry, thawed
6 tbsp butter, softened
1/2 tsp vanilla extract
1/3 cup granulated sugar
2 None large egg yolks
1 tbsp flour
1 1/4 cups ground almonds
10.5 oz frozen mixed berries
Preparation

Preheat oven to 425\u00b0F. Grease an 8x12 inch rimmed baking pan.
Roll out puff pastry until large enough to cover base and sides of pan then use to line pan, pressing into sides. Prick all over with a fork then freeze for 5 mins.
Place a sheet of parchment over puff pastry then top with another baking pan. Bake for 5 mins then remove top pan and parchment paper and bake for another 5 mins, or until lightly browned. Let cool for 5 mins. Reduce heat to 350\u00b0F.
Meanwhile, to make the frangipane, beat butter, vanilla, sugar and egg yolks until light and fluffy. Stir in flour and ground almonds. Spread over pastry base then sprinkle with berries, pressing firmly into frangipane. Bake for 30 mins, or until lightly browned.
