Cheese Omelette With Mushrooms And Spinach - cooking recipe

8 None large eggs, lightly beaten
9 oz mixed mushrooms, trimmed
1 clove garlic, peeled and finely chopped
5 cups baby spinach
1/4 cup chicken stock
1 tsp soy sauce
Preparation

Heat a lightly greased frying pan over high heat. Add the eggs and cook for 3 mins or until the eggs have set. Gently fold in the sides of the omelette. Remove from the pan and keep warm.
Reduce the heat to medium and cook the mushrooms and garlic for 2 mins, stirring, until golden. Add the spinach and cook, stirring, for another minute, then pour in the stock and bring to a boil.
Drizzle the omelette with soy sauce, cut into four and serve topped with vegetables .
