Shrimp And Feta Pies - cooking recipe

Ingredients
    1 tbsp olive oil
    1 medium onion, finely chopped
    2 cloves garlic, crushed
    1 tbsp plain flour
    1/4 cup dry white wine
    1 can (14 oz) diced tomatoes
    1 2/3 lbs large shrimp, peeled and deveined
    2 tbsp finely chopped fresh flat-leaf parsley
    12 sheets phyllo dough
    4 tbsp (1/2 stick) butter, melted
    1/2 cup crumbled feta cheese
Preparation
    Heat oil in large skillet on medium-high heat. Cook onion and garlic, stirring, until onion has softened. Add flour; cook, stirring for 1 min. Add wine and tomatoes; bring to a boil, stirring. Reduce heat to low; simmer, uncovered, for 3 mins, or until sauce thickens slightly. Add shrimp and parsley; cook for 1 min. Season to taste. Cool.
    Preheat the oven to 400\u00b0F. Oil a 6-cup muffin pan.
    Layer 2 sheets of phyllo, brushing each with butter. Fold in thirds to enclose buttered side. Brush with butter. Fold in half, forming a square; brush with butter. Gently press into a muffin cup. Repeat with remaining phyllo and butter. Bake for 5 mins, or until lightly browned.
    Divide shrimp mixture among phyllo crusts. Top with cheese. Bake for 10 mins, or until lightly browned. Let stand for 5 mins before serving.
