Crispy Fried Cod With Tartar Sauce - cooking recipe

Ingredients
    2/3 cup mayonnaise
    1 tbsp pickle relish
    1 tsp capers, chopped
    1 tbsp fresh herbs, chopped (such as parsley, chives, tarragon)
    1 None hard-boiled egg, finely chopped (optional)
    None None Crispy Fried Cod
    1/4 cup olive oil
    8 None cod or John Dory fillets
    1/4 cup all-purpose flour, seasoned
    2 tbsp rice flour
    None None French fries and lemon slices, to serve
Preparation
    To make the Tartar sauce, combine mayonnaise, pickle relish, capers, herbs and hard-boiled egg, if using. Season. Set aside.
    Heat 2 tbsp oil in a large frying pan over high heat. Combine all-purpose flour and rice flour then lightly dust fish. Working in batches, fry fish for 2 mins per side, until crisp and cooked through. Drain on paper towels. Serve with Tartar sauce, French fries and sliced lemon.
