Spaghetti With Spinach, Sweet Potato And Goat Cheese - cooking recipe

Ingredients
    1/2 lb spaghetti
    4 tbsp olive oil
    2/3 lb sweet potatoes, peeled and cubed
    1 None onion, peeled and finely diced
    1 clove garlic, peeled and finely diced
    1 pinch nutmeg
    1/3 cup heavy cream
    1/4 cup milk
    3 oz goat cheese
    1/4 lb baby spinach leaves, rinsed and drained
Preparation
    Cook the spaghetti according to the package instructions.
    Meanwhile, to make the sauce and vegetables, heat the oil in a frying pan and cook the sweet potatoes for 6-8 mins until golden brown. Add the onion and garlic and cook for 3 more mins. Add the nutmeg, cream, milk, and goat cheese, season to taste and simmer briefly.
    Drain the spaghetti, collecting 1/4 cup of the cooking water. Mix the spaghetti and water with the sauce and vegetables. Season to taste and serve immediately.
