Warm Smoked Chicken And Lentil Salad - cooking recipe
Ingredients

8.75 oz green lentils
2 tbsp white wine vinegar
1 tbsp dijon mustard
1 tbsp extra virgin olive oil
12.25 oz smoked chicken breast, skin removed, sliced
8.75 oz baby plum tomatoes, halved
3 stalks celery, thickly sliced on a bias
1/3 cup fresh parsley leaves
Preparation

Cook lentils in boiling water for 35 mins, until tender. Drain.
Meanwhile, combine vinegar, mustard and olive oil. Season to taste.
Combine lentils, chicken, tomato, celery and parsley. Drizzle with dressing and toss to coat. Serve.
