Apricot Chicken Sandwich - cooking recipe
Ingredients

2 None boneless skinless chicken breasts
2 tsp Moroccan spice mix
1 tbsp olive oil
1 small sweet potato, peeled and thinly sliced
1/3 cup low fat yogurt
2 tbsp low fat mayonnaise
2 tbsp finely chopped dried apricots
2 tbsp slivered almonds
1 cup baby arugula leaves
1 loaf ciabatta, quartered and split
Preparation

Combine the chicken, spice mix and oil in a medium bowl.
Cook the chicken and sweet potato in a heated, oiled medium skillet until cooked through. Cool.
Combine with the yogurt, mayonnaise, apricots and nuts in a medium bowl.
Slice the chicken. Sandwich the arugula, sweet potato and chicken between the bread pieces and serve.
