Burger Wraps With Tomato Parsley Salsa - cooking recipe

3 None tomatoes, finely chopped
1/4 cup chopped parsley
1 tbsp lemon juice
1 tbsp vegetable or olive oil
1 lb lean ground beef
1 None egg, lightly beaten
1 1/2 cups soft fresh breadcrumbs
1/2 tbsp Moroccan spice mix
7 oz store-bought hummus
6 pieces large whole wheat flatbread
Preparation

For the tomato parsley salsa, mix tomatoes, parsley, lemon juice and half the oil in a bowl. Season.
Mix ground beef, egg, breadcrumbs, spice mix and 1/4 cup water in a bowl. Using damp hands, shape mixture into 6 patties.
Heat remaining oil in a large skillet on medium heat. Cook patties for 10 mins, turning, or until browned and cooked through. Cut patties in half lengthwise.
Fold each piece of bread in half. Spread evenly with hummus. Top with patty halves and tomato parsley salsa. Fold to enclose filling. Serve.
