Candied Sweet Potato With Orange Gremolata - cooking recipe

3 1/3 lb baby sweet potatoes, peeled
1 None orange, zested
2 tbsp orange juice
2 tbsp lemon juice
2 tbsp brown sugar
2 tbsp butter
2 tbsp finely chopped fresh parsley leaves
2 cloves garlic, finely chopped
Preparation

Preheat oven to 400\u00b0F. Line a shallow baking dish with parchment paper.
Place sweet potatoes in a large saucepan and cover with cold lightly salted water. Bring to a gentle boil then lower heat and simmer gently for 5 mins, until par-cooked. Drain and transfer to prepared pan. Add orange juice and lemon juice and toss to combine. Season then sprinkle with sugar and dot with butter. Bake for about 40 mins, turning carefully 2-3 times.
Meanwhile, to make the gremolata, mix parsley, garlic and orange zest together in a small bowl. Sprinkle over sweet potatoes to serve.
