Italian Pizza - cooking recipe

Ingredients
    1/4 cup olive oil, plus extra to serve
    3 1/2 tsp active dry yeast
    4 1/4 cups all-purpose flour
    3/4 cup tomato sauce
    5 oz pancetta, sliced
    12 oz mozzarella cheese, sliced
    1 bunch baby arugula
Preparation
    Preheat oven to 425\u00b0F. Lightly grease 3 pizza trays.
    Combine olive oil with 1 1/2 cups warm water. Add yeast and stir until dissolved. Set aside for 5 mins, until foamy. Sift together flour and 1 tbsp salt. Add yeast mixture and mix until combined. Knead until smooth then cover and set aside in a warm area to proof until doubled in size.
    De-gas dough and knead lightly. Divide into 3 pieces then shape each into a 12 inch circle. Transfer to prepared trays. Spread tomato sauce over pizzas and top with pancetta and mozzarella. Bake for 10-15 mins, until golden brown and crispy. Top with arugula and drizzle with extra olive oil.
