Ingredients

1 cup butter, at room temperature
3/4 cup brown sugar
1/2 cup granulated sugar
2 None large eggs, at room temperature
3 1/4 cups gluten-free flour, plus extra for dusting
1/2 cup rice flour
1/2 tsp baking soda
1/2 tsp xanthan gum
1 cup strawberry jam
Preparation

Beat butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Mix dry ingredients together then add to creamed mixture and beat until combined. Turn out onto a lightly floured work surface and knead lightly until dough just comes together. Cover with plastic wrap and chill for 30 mins.
Divide dough in 1/2. Roll 1 piece between 2 sheets of parchment paper into a 10x12 inch rectangle. Remove top piece of parchment paper. Spread 1/2 the jam over dough. Starting from long side, roll up to form a log. Repeat with remaining dough and jam. Chill until firm.
Preheat oven to 400\u00b0F. Line 3 baking trays with parchment paper. Cut logs into 1/4 inch slices. Place on prepared trays and bake for 10 mins, or until firm. Let cool on trays.
