Grilled Vegetable And Mozzarella Toasts - cooking recipe

Ingredients
    2 None zucchini, thinly sliced lengthwise
    2 tbsp olive oil
    1 tsp chopped fresh oregano
    4 None large slices ciabatta or artisan bread
    2 tbsp red pepper tapenade
    9 oz fresh mozzarella cheese, torn
    1/2 cup roasted red pepper, sliced
    None None Basil leaves, to serve
Preparation
    Preheat a grill pan on high heat or preheat the grill to medium. Line a baking pan with parchment paper.
    Lightly brush zucchini with 1 tbsp of the oil. Sprinkle with oregano. Grill 1-2 mins each side, until lightly charred. Set aside.
    Brush bread with remaining oil. Grill 2-3 mins each side, until golden.
    Spread bread slices evenly with tapenade. Place on baking pan Top with zucchini and mozzarella.
    Broil toasts 4-5 mins, until cheese melts. Top with sliced pepper and basil leaves.
