Pea, Leek And Mint Frittata - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None small leek, finely sliced (white part only)
    3/4 cup frozen peas, thawed
    2 tbsp finely shredded mint
    6 large eggs, beaten
    1/4 cup milk
    None None salad, to serve
Preparation
    Preheat broiler on high.
    Heat oil in a pan over medium heat. Saute leeks for 3-5 minutes, until softened. Add peas and cook for 2-3 minutes, until heated through. Stir in the mint.
    Whisk together eggs and milk. Season to taste. Pour over pea mixture. Increase heat to medium and cook for 2 minutes, until beginning to set. Reduce heat to low and cook for 5-10 minutes, until almost set.
    Place under the broiler for 2 minutes, until golden. Loosen edges with a knife. Turn onto a plate. Serve with salad.
